T Sconyers asked what we do for quick dinner ideas.
One of my favourite options is to make a mix for tacos and burritos
which can also go on baked potatoes and in toasted sandwiches.
1 onion, sliced
1 clove garlic
0.5 kilogram (1pound) canned tomatoes
0.5 kilogram (1 pound) cooked kidney beans (I use canned)
Cajun spice and black pepper
Place the onion and garlic in a little water and saute. Add canned
tomatoes and kidney beans with cajun spices and black pepper. Heat
through and cook until desired consistency is achieved. Mash for use in
tacos and burritos.
You can add vegetables to this if you like, or cook it for longer for a
fuller flavour but for a filling and healthy meal in minutes I defrost a
pita bread, spoon in this mix and sprinkle some cheese on top. It is a
great (if slightly unorthodox) burrito!
Will try to think of more quick meal ideas tomorrow. (I have been
feeling guilty as I have not posted contributions lately but have
managed to use some of the wonderful recipes posted by others.)
