I had time on Sunday so I made a big pot of chilli and one of curried
vegetables, saved out a meals worth or two of each and put the rest in meal
size portions inthe freezer. I find this helps a lot on those days I just
can't get to cookin'.
here one that I have made a cou-le times recently that is quite tasty,
takes about 30 minutes start to finish, add a salad if you have time, maybe
that yummy cucumber salad posted recently--
Quick bean and potato soup
into the pot...
2 cups water
peel and cup 2 or 3 medium potatoes
add 2 cups cooked beans (we like pinto, red, or black in this, and I
include a little cooking liquid)
large onion, chopped
several cloves garlic, minced (or use powder)
1 - 16 ounce can stewed or whole tomatoes
1 tablespoon (or more) chili powder
2 teaspoons ground cumin
1 teaspoon oregano
1 tablespoon chopped pickled jalapeno slices (optional)
1/4 cup bulgur wheat
salt and pepper as required
Cook until spuds are tender.
Add frozen corn, or canned hominey or whatever sounds good.
