I'm a nut about new ethnic foods, too. There is an unbelievable, although not
fatfree, recipe site at www.soar.berkeley.edu/recipes. It stands for
Searchable Online Archive of Recipes and is so nicely organized that you don't
have to remember the name of what you're looking for if you've got the time to
scan all the likely recipes from that country. Warning: their concept of
vegetarian is slightly bizarre.
If I recall, many of those Ethiopian flat bread recipes were high in oil, but
there were a couple that didn't have much. If you're one of those people who
can gain inspiration from unhealthy recipes, you will have a ball here!
