Parsley is wonderful--chop it up and add it to scrambled egg-beaters or
omelets, any potato dish or steamed veggies, soups, stews. If you have a
choice, go for the flat-leaf Italian parsley rather than the less
flavorful curly-leaf kind. I keep a pot on my balcony--buy a healthy
plant and put it in a good-sized pot, or in the ground if you have that
option, and you can have parsley for a couple of years (it's a biennial).
