Karen was looking for lentil burger recipes. Here's one I got off another
list - vegfood - that I haven't tried yet, but which sounds good. I forget
the name of the guy who sent in his recipe, but his email address is

Lentil Burgers for Bean Haters
2 cups cooked and cooled lentil/bulgur mixture (see below)
1 cup breadcrumbs
1 egg, or egg-equivalent
1 T seasoning of your choice (Basil, oregano, etc)
1/2 cup chopped onion
1/2 cup chopped pepper
2 cloves minced garlic
1/2 cup milk/soymilk
Combine all ingredients except milk and mix well. Stir in milk. Chill for
30 minutes. Form chilled mixture into patties and bake at 350F for 10
minutes on each side, or "fry" in a skillet for 10 minutes on each side.
Cooked burgers freeze well and need only a minute or so to be reheated.
The author added the following notes: "I've successfully added such things as
leftover brown rice and black beans, and I rarely follow the measurements for
onion and garlic to the letter. The basic lentil bulgur mixture makes a
great base for Mexican dishes as well."
Lentil-bulgur mixture:
mix equal parts of dry lentils and bulgur wheat. Combine 1 part dry grains
with 2 parts water in a saucepan. Bring to a boil and simmer until all the
liquid is absorbed, about 30-45 minutes. (You can season the water or use
stock if you like.)
