carrots

Cat has an abundance of carrots:

Carrot and Raisin Salad

Grate carrots,
add raisins, and a bit of crushed pineapple to moisten.  Sprincle some
sliced scallions on top for garnish if you like.


Carrot soup

peel and slice or chunk carrots, cook until very tender, put into the
blender or food processor and let it go till smooth, add cooking water and
ff soy or skim milk to correct consistency.  Season with grated fresh
ginger, salt and pepper.  You can add a sweet potato or some winter (hard)
squash to this if you like.

Hot pickled carrots

peel and slice rather thickly on the diagonal.  Steam until barely tender.
Place into a covered container with steaming liquid,  add jarred pickled
jalapeno slices, amount depends on you,  and a clove or 3 of fresh garlic,
lightly crushed, and a few peppercorns,  top with about cider vinegar and
water, about 1 part vinegar to 2 or 3 parts water.  Cover and chill several
hours, overnight is best,  shake or stir occasionally.

Cauliflower is also really good this way.

Or, toss one carrot to the cat and see it it entertains her for a while :-)
