Hi there,
I've been enjoying this list for a very long time, and seeing the posts about
carrot and raisin salad, thought you might enjoy this one my mom makes
very often.
Carrot Salad
1lb carrots - grated
1 bunch cilantro (corriander) including stems - chopped
2 chillies - (serrano, jalapeno, you pick) - chopped very fine, or slivered
use more if you like your food hotter
lemon juice to taste
salt to taste
Toss all the above together, let it rest for about 1/2 hour in the fridge for
the flavours to blend, and serve.
You can use half carrots, and half of daikon radish for a variation.
Tender juicy carrots will give the best results.
