Coconut Custard Pie

Hi!  This is a fun recipe, adapted from "Weight Watchers Favorite
Recipes."  If you squint really hard and look sideways at the finished
product, you can almost pretend the squash is real coconut.


2 c. cooked spaghetti squash
1 c. skim milk, or equivalent
4 eggs equivalent
1/4 c. flour
1/4 c. sugar
1/2 t. vanilla extract
1/2 t. coconut extract
1/4 t. double-acting baking powder

Preheat oven to 350.  Spray a 9" pie plate with nonstick spray.  With
the back of a spoon, spread squash over bottom and up sides of plate. 
Set aside.  In blender or food processor, combine remaining
ingredients.  Pour over squash and bake 50-60 minutes, until a knife
inserted in center comes out clean.  Transfer to wire rack to cool. 
Cover and refrigerate overnight.

Now for a stupid question:  What is SAD?  All I can come up with is
Seeking Arterial Disease.
