<looking for some good, low-fat ice cream recipes that don't use eggs>
I've never tried this recipe. It came from the Vegetarian Society of
Georgia newsletter.
Homemade Soy "Ice Cream"
1 liter Vitasoy creamy original soymilk (I would use a no-oil-added
soymilk)
3/4 cups sugar
1 1/2 Tbsp vanilla extract
1/8 tsp salt
Heat soymilk and sugar and stir until sugar is melted. Add vanilla and
salt. Cool slightly, put in icecream maker and follow manufacturer's
instructions.
(I suppose you could add pureed fruit of your choice as well.)
