Felicia asked about some quick breakfast fixes.
One of my all-time favorites is cold sweet potatoes/yams that have been
steam-baked in their skins. Wash about 6 small sweet potatoes and place,
still wet, in a corningware dish. Cover & bake at 400 degrees for about
an hour. Refrigerate overnite. Two will make a tasty and filling break-
fast, and the leftovers will keep for a couple of days in the fridge (so
you can make enough for a 3-day supply all at once).
Another of my favorites is a bowl of uncooked quick-cook (one-minute)
oatmeal with about half a cup of unsweetened applesauce and 3 tablespoons
of honey. Add cold water, stir and enjoy! It makes a nice change from
hot cereals, especially in the summer.
