Yesterday we had some friends over and I made my own, even cheaper
version of Trader Joe's corn and black bean salsa--it was just as good,
maybe better. I just dumped a can of whole kernel corn and a can of black
beans (both drained, both about 15 ounces) into a bowl with a 12 oz. jar
of TJ's cheapest ($1.09) regular salsa, stirred in a couple
tablespoonfuls of chopped cilantro and sprinkled a bit more over the top
for looks. Great success with baked corn chips!
I also want to thank all the folks who sent millet recipes in response to
my request a few months ago--I don't think I remembered to do that.
Sorry! (Of course now it's too hot here to even think of cooking, but
when what southern AZ laughingly refers to as fall arrives, I'll try all
those I haven't gotten to yet!)
