Recipe: Corned-Belief Hash <T>
This has a taste of old-fashioned corned-beef hash, without the
fat or meat. Non-vegetarians will not believe it's meatless if
you wait until after they've finished it all before you tell them.
I've made this dish with fresh raw potatoes, scrubbed and then sliced
into small cubes, frozen hash browns and most recently frozen O'Brian-
style potatoes with onions, red and green peppers already included.
The ingredients are given per serving:

1 C diced small-medium potato (see note above)
1 T diced bell pepper, red, green, yellow or a combo
2 T soy imitation bacon bits
1/3 C chopped onion -or- 2 T instant dried chopped onion
1 T Bragg's liquid aminos (or a reduced-salt shoyu/tamari)
1/2 t fresh ground black pepper
In a HOT large non-stick skillet add ingredients in the order listed,
spreading out the initial layer of patoatoes evenly. Cook at medium-
high, turning and mixing to kep from burning, until evenly browned,
about five minutes.
If your non-stick skillet is sticking, before adding any ingredients,
but when hot, spray a one-second blast of Pam and then wipe surface
with a paper towel. leaving only a fine patina of spray on the pan.
