Regarding pesto,
you may find that freshly chopped basil is in and of itself a pretty good
substitute on pasta. I make a dish that gets raves, there's not much of
a "recipe" to it, but here goes:
Thinly sliced red, yellow and green peppers ($ but pretty)
Roasted garlic, chopped
Handful of finely chopped basil
Sliced mushrooms
"Saute", adding basil at the end. Squeeze a lemon over pan. Toss with
fettuccine and sprinkle with fatfree Parmesan cheese.
Yum!
