Bamboo Shoots

I use bamboo shoots all the time, I have no measurement but this is how
I use them, cover shoots with boiling water and then drain. I chop
some scallions and beat up some egg whites, white pepper, and mix all
together. Fry in a non stick pan sprayed with some pam. I serve this 
over plain rice. You can use hosin sauce if you should like.
