Strawberry Shortcake
Makes:
1 cake (8 biscuits)
Ingredients:
1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
3 tablespoons lowfat margarine
3/4 cup nonfat milk
Non/lowfat whipping cream or yogurt
FILLING
2 pints fresh strawberries, sliced
1 tablespoon orange or pineapple juice
1 tablespoon granulated sugar
Directions:
Preheat oven to 450 degrees F. Spray a baking sheet with nonstick
cooking spray
(nonfat). Set aside.
Sift together the flour, sugar, and baking powder. Add the margarine
to the flour mixture
and mix until coarse crumbs form. Stir in the milk until a soft dough
forms.
Roll out the dough to a 1/2-inch thickness. Using a 2 1/2-inch biscuit
cutter, cut out
biscuits. Place on the baking sheet. Bake for 12-15 minutes. Allow
biscuits to cool.
Combine strawberries, juice, and sugar. Mix well.
Cut the biscuits in half horizontally. Top each half with filling and
add whipping cream or
yogurt. Cover with tops of biscuit.
