I've grown purple, red, yellow and striped potatoes in my garden and have
found that they are great mashed and mixed with veggie broth. They are also
good roasted under the broiler sprinkled with rosemary, a little garlic, and
salt and pepper. They are also good just boiled and eaten with a little salt
and pepper and your favorite salsa.
So far I haven't found any specific recipes for purple ones, but will keep
looking.
