Noel, I've found the public library is the cookbook junkie's greatest
friend. I can borrow cookbooks that I would never dream of purchasing
and select only those recipes that contain ingredients I'm interested in
using. My latest find is _Great Vegetarian Cooking Under Pressure_ by
Lorna Sass. I have an old jiggle-top pressure cooker, so don't cook the
foaming beans and grains that she suggests adding oil to control the
foaming, but the book contains many great recipes and lots of helpful
charts and tips. I believe the recipes in her book _Recipes from an
Ecological Kitchen_ include instructions for conventional stove-top
cooking as well as pressure cooking.
