I can't remember where I originally heard this, but you can add kombu to
beans when they are cooking, and it will help "de-gas" them. I buy kombu
in sheets at a local Vietnamese grocery, and toss one into the bean pot.
It pretty much dissolves in the cooking, and really does seem to help.
The sheets are about the size of corn shucks used to wrap tamales.
