I, too, cannot stomach brown rice. I make this salad (recipe to follow)
that my mom found which call for white rice and I make it half brown and
half white. This seems to help and then at least half of it is more
healthy. I would guess that this would work in many recipes.
Rice and Bean Salad
Dressing:
1/2 c veggie broth (recipe calls for Ch****n)
1 T peeled, grated gingerroot (I don't care for ginger and omit this)
1 t minced garlic
1/4 c white-wine vinegar (I just use white vinegar)
1/2 t each hot pepper sauce and salt
Salad:
3 c cooked rice
1 15 oz can black beans, rinsed and drained
1/4 large European cucumber, quartered lengthwise and cut into 1/4 in
thick slices (I just use regular cucumbers as they are cheaper - don't
knowq what the difference is)
1/2 c diced red bell pepper (green works too)
1/3 cup sliced scallions
1 T olive oil ( I omit)
Dressing: In small saucepan, bring broth, ginger, garlic to a boil.
Stir in vinegar, pepper sauce and salt.
Salad: In a large bowl, mix all ingredients. Add dressing. Cover and
chill for up to 6 hours. Stir well before serving.
