I really don't mean to hog all the space today, but if you've never
tried whole wheat pizza, you've not enjoyed pizza the way it was meant
to be eaten.
My recipe is simple:
3 cups whole wheat flour
1 overflowing tablespoon of wheat gluten
about 12 ounces of water
1 heaping tablespoon of yeast
Knead (I use a food processor) to the "baby's tush" stage.
Cover with wet towel (or cover with a bowl...my favorite)
Leave alone for ten to fifteen minutes or so.
Then punch down and start making your dough.
Depending on what you put on the dough, you probably won't even notice
that you're not eating the other stuff.
