sorbet

HI all,

We just bought a Cuisinart ice cream & sorbet maker, and tried a fairly
generic sorbet recipe out of their recipe book.  The generic sorbet recipe
is the following:

	2 cups water
	2 cups sugar
	Either:
		1 1/2 cups juice
	Or:
		1 1/2 cups fruit mashed down to 1 cup

	Heat the water & sugar on the stove on medium-high heat until
	boiling.  Allow to simmer for 3-4 minutes after it comes to a
	boil.  Cool COMPLETELY (either refrigerate overnight or place in
	an ice bath for 30 minutes to an hour).  Mix in the juice or
	fruit and pour into the machine.  Process for 25-30 minutes.

I suspect you could use any ice cream maker for this recipe.  We used
orange juice for our first attempt.  After 30 minutes of processing, it
was still a bit sloppy, so we stuck it in the freezer for an hour.  At the
end of that hour, it was definitely orange sorbet!  Pretty tasty stuff...
:)  This makes about a pint, pint and a half of sorbet.  It keeps for
about 2 weeks before it starts to do weird things in the container (lots
of orange flavored goo, as it were).

We haven't decided what flavor we want to do next.  Orange & cranberry,
possibly, or use some frozen raspberries to make raspberry sorbet...
