Banana French Toast - from "Student's Vegetarian Cookbook" by Carole
Raymond
1 cup sliced ripe banana
3/4 c soy milk or orange juice
1/2 tsp. ground cinnamon
4 slices whole wheat bread (or 5)
1/2 tsp. vegetable oil
1. Combine the banana, soy milk or orange juice, and cinnamon in a blender,
blend until smooth. Pour the mixture into a shallow pan or bowl.
Dip the bread into the batter and turn it gently to coat both sides.
Lightly oil a nonstick skillet and heat over medium heat until hot. Add the
coated bread slices, and fry them until they are golden brown, 2 to 3
minutes on each side. Serve with maple syrup.
