I got this recipe from the Washington Post "food" section while I was
home. Sorry about the vague directions...
Quinoa Salsa
1 cup quinoa - rinsed!
2 cups (?) water or "broth"
as much fresh cilantro as you can stand, chopped
1 jalapeno pepper, seeded, deveined and chopped or to taste
1 large ripe tomato, chopped
1 small red onion, chopped
Bring the broth or water to a boil. Add the quinoa and reduce to a
simmer; cook for 15 to 20 minutes. When the quinoa is tender, remove from
heat and drain off any excess water. Cool for a while and mix all
ingredients together. Chill for at least 30 minutes before serving to
allow flavors to blend.
Apologies again for the the vagueness of the quinoa cooking directions; I
think what I wrote is right but check a cookbook first. In any case, you
must rinse the grain first, otherwise it will taste bad! I altered the
recipe by using couscous instead of the quinoa - which worked fine - and
using a bottled jalapeno.
