I bought a huge bag of plums and discovered this yummy breakfast recipe.
Plum Oatmeal
3 fresh plums, pitted and chopped
1/4 cup raisins
2 cups apple juice
1 heaping cup slow cooking oatmeal
1 tsp cinnamon
1 tsp dehydrated lemon peel
Combine apple juice, plums, raisins, and cinnamon in a small pot and bring to
a boil. Lower heat and simmer for 5 minutes. Stir in oatmeal and simmer until
the juice is absorbed. cover and let rest for 1 minute.
Serves 2-4.
This is not real sweet so some of you may prefer to add some sugar or honey.
