To the person interested in a nonfat fgt recipe:
Here is the one I use:
Crispy Baked Green Tomatos
green tomatos sliced about 1/4 inch thick
1 eggwhite beaten with 1 tablespoon water or milk
cornmeal
pinch salt
pinch sugar
pinch black pepper
pinch cayenne pepper
optional: pinch dill or basil or parsley (or all three!)
-Preheat oven to 400 degrees F
-mix cornmeal and spices and sugar (I think the sugar is important to cut the
bitterness of the green tomatos)
-dip the tomato slices in the eggwhite (note: I have skipped the eggwhite
dip and
that works fine, too- I think the eggwhite might make the final product a tad
more crispy)
-bake on a 'pam' sprayed cookie sheet for about 15-20 min- the time
will depend on how thick and how juicy the tomatos are. I sometimes
carefully flip them half way through baking.
There would be good served with a rice and black bean salad.
