Came across another recipe using green tomatoes that looks good - so I
thought I'd pass it along. It's from "Life Tastes Better Than Steak"
cookbook. Patty in Arizona.
Baked Green Tomatoes with Zucchini Serves 4
2 zucchini squash or more
1 onion, sliced
1 green or red bell pepper, sliced
4 green tomatoes
1 Tbs. brown sugar
6 fat free soda crackers, crushed
1 cup grated fat free cheddar cheese
pepper to taste
seasonings of your choice, such as basil
Cut the zucchini in 1/2 inch slices and layer them in a pan so they are
about 2 to 3 inches deep. Layer onion and pepper on top of zucchini, and
top with slices of the green tomatoes. Sprinkle the brown sugar over the
tomatoes and cover with cracker crumbs. Cover with foil and bake at 350F
for one hour. Sprinkle cheese over top and bake for a little while longer
to melt the cheese. Do not bake too long or cheese will get tough.
