I hesitate to bring this up for fear of being called a party pooper, but
this discussion of french fries is not really appropriate on a fatfree list.
For our friends downunder-- I like cold grain and bean salads. They do
require some heat in the coking of the grains, but that is minimal. Here
are a couple favorites.
Black beans and Corn Salad (amounts approximate, feel free to wing it)
3 cups cooked black beans
2 cups corn
chopped red onion
chopped tomatoes if you like
chopped bell peppers, use various colors for eye appeal
1 - 2 teaspoons ground cumin
toss with seasoned rice vinegar to taste
Rice and Pea salad
3 cups cooked rice (I prefer brown long grain for this)
2 - 3 cups frozen petite peas
1 cup sliced celery
1- 6 ounce can slices water chestnuts
a grated carrot or two
toss with seasoned rice vinegar
And of course tabbouleh,
I like to make it wiht plenty of chick peas, fresh tomatoes, onions,
parsley, and whatever strikes my fancy, maybe some artichoke hearts. Dress
with lemon juice.
