I made this as the recipe stated and wasn't very impressed, until I had
the cold leftovers! Yum!
Pumpkin Casserole
From Simply Vegan by Debra Wasserman
29-oz can unsweetened pumpkin
3 apples, chopped
1 cup raisins
2 tsp cinnamon
1/4 tsp nutmeg
2 Tbsp molasses
1/2 cup chopped walnuts (try Grape-Nuts or omit)
Preheat oven to 375 degrees. Mix all ingredients and place into a loaf
pan. Bake for 20 minutes. Serve hot.
