Potato Salad
2 1/2 lb. red potatoes
1/2 cup parsley, chopped
1 clove garlic, minced
2 Tbs. sweet onion, chopped finely
Juice of 2 lemons (@6 Tbs.)
salt and pepper
2 stalks celery, chopped (optional)
Boil potatoes, and cool, and cut in bite-size pieces. Add remaining
ingredients and mix well. Chill and serve.
Note: This is a very clean, fresh tasting salad. The original salad had 1
Tbs. oil added with the lemon juice and seasonings which for five servings
yielded 3 grams fat and 197 calories per sv.
I prefer this but lots of people can't eat potato salad without lots of
mayonnaise.
