Fatfree Taco Shells

Amy asked about fatfree taco shells.  You should be able to find corn
tortillas that have .5g of fat in the dairy case at the grocery or at a
Mexican grocery.  Half a gram of fat is about as fatfree as you can get - I
believe there's natural fat in the corn.

Place tortillas in a low oven - no higher than 325 degrees F - by curving
them like a taco shell and "hanging" them over the oven rack.  Bake until no
longer soft, approximately 10 or 15 minutes.  Don't overbake or let them get
brown.

I also like to make taco chips. Cut corn tortillas in quarters, lay them
flat on a cookie sheet, sprinkle lightly with taco seasoning and a tiny bit
of salt.  Bake
at 325 degrees F until crisp but not brown, about 15 minutes.  They store well
and freeze well.
