Here's another question: how do you tell if plantains are ripe?

Just regard them pretty much as you would bananas. A properly
ripened plantain will have a yellowish skin and a sweetish,
banana-like aroma and will be a little soft-ish. Even if it isn't
fully ripenend when you use it, you'll probably still enjoy it, but
it's pretty easy to determine the ripeness if you just think
"bananas".
