This is my mom's recipe:
Barley-Vegetable Soup

1/2 cup barley 4 carrots
4 tsp. veggie broth mix 1 zucchini
64 fl. oz. water 2 cups spinach
1 onion 1 cup frozen peas
1 carrot
1 tsp. thyme
1 bay leaf
1 tsp. pepper
Step 1 -- Wash the barley. Cut the carrot and onion any way you want to.
Place barley, water, broth mix, onion,carrot, thyme, bay leaf, and pepper in
a pot and boil. Reduce heat and simmer for 1 hour or until barley is
tender.
Step 2 -- Slice carrots and zucchini and add them to the pot. Wash and chop
spinach. Add spinach and peas to the pot a few minutes before serving.
