Greek Lentil Soup 2 cups uncooked lentils 8 cups veg. stock 1/2 onion, chopped 1 small carrot, chopped 1 small potato, chopped 2 bay leaves 1 1/2 tsp. salt 2 tsp. red wine vinegar In a big pot, mix all ingredients except the vinegar. Cook until lentils are soft (about 1 hour). Add vinegar and serve. VEGAN ------------------------------
