fact that potato starch and potato flour are not the same thing.

YIKES!!!  ;))))

I made this mistake early on in my learning to bake with gluten free
mediums.  If you buy potato flour you will end up with a gloppy mess on
your hands.  Potato flour is able to hold about a thousand times its own
weight in liquid (I exagerate a bit, but it does hold A LOT of liquid).
Also, potato starch does not have much of a taste, whereas the flour does.
Potato starch looks, tastes, and feels much like cornstarch in consistency.
