I use agar for pumpkin pies, sweet potato pies and any fruits that I
can puree like mango. I have the agar soak for 30 minutes in cold water
and then dissolve it in boiling apple juice. I, then, place it in the
blender with my vegetable or fruit and mix it until thoroughly blended.
Pour onto shell and chill until firm. Maple syrup, raisins, soy milk,
vanilla flavoring etc. can be added for extra flavor. I use a strip of
6'x2' of this marvelous seaweed. I understand that there are also
flakes. There is a wonderful book called "The Uncheese Book" , a vegan
book which makes mock cheese with this vegetable. Yum!
