I like millet. I have it for breakfast with a little soy milk, raisins
and an orange. It is grainy yet it lumps. Chewing millet brings out
the flavor. I also make millet balls with tomato sauce. I sautee some
spinach and onions, mix it with cooked millet and 1/4 C flour (to bind)
and shape.
Bake until lightly brown. If I don't have the time to shape, I place
the mixture in a pan and after baking it, cut it into squares. It is
different, but I find it very tasty. I may add some vanilla flavoring
to my morning meal. One cup of millet to 3 cups of water is the cooking
ratio and yields approximately 3 cups of cooked millet. I understand
millet has the highest protein content of any grain.
