I was just catching up on some older digests and noticed something that
deserves a caution for anyone who kept the apple butter recipe in digest 27?
(sorry, I've already deleted it, so I can't reference the exact number or
the poster). The poster gave the alternatives of starting with applesauce
or fresh apples. The caution is this: anyone starting with fresh apples
will need to cook them into sauce BEFORE adding any sugar and proceeding
with the recipe, otherwise the apples will stay in firm chunks and will
never cook into a smooth sauce (not very desirable for apple butter). Sorry
about the delay in pointing this out!
