Hi Karen,
How much water you use to reconsitute TVP will largely depend on what type
you're using. The small granules are easiest: you can add them straight to
soupy things or pour 7/8 cup boiling water over them and let them stand for
5-10 minutes. If you've got the chunk-sized (which are my new favorites), use
1 cup boiling water for 1 cup TVP. You will need to cook it over low heat for
15-20 minutes or microwave it for 6-10 minutes. Adding a little ketchup or
vinegar helps the absorption.
A great book (where I got this info from) is The TVP Cookbook by Dorothy R.
Bates. You can also get TVP recipes from the fatfree archives (I know my BBQ
sandwich one is in there). I have three on my website, and two of them are
fatfree. They're at http://members.xoom.com/veg/recipes/soy.html .
