Okay ,
lets try this one out for preserving and canning that extra bumber crop of
gorgeous zucchini
I was lucky enough to find a clipping from the GARDENS FOR ALL NEWS -
DATED 1984
Zucchini Pineapple OR Pineapple Zucchini
1 gallon peeled and seeded cubed or grated zucchini
3 cups sugar
1 1/2 cups real lemon juice
3 cups unsweetened pineapple juice
Mix ingredients. Simmer 20 minutes. Pour into jars and seal. Boil jars in a
hot water bath
for 15 minutes.
This can be used in any recipe calling for pineapple.
