Saturday night dinner

Pam,
Sounds like you need a cookbook!  Or you can check out the fatfree archives,
the website is listed at the end of each digest. What do your do for dinner
when Daddy is at home?  In the meantime, here are a couple quickies.

Pasta

Sauté onions, garlic and sliced mushrooms in a tiny bit of broth or water,
cook on medium low heat until mushrooms begin to give up their delectable
juices.  Then toss in a good handful or two of your favorite greens, sliced
into shreds.  I suggest collards or kale.  Cover until greens are nicely
wilted. Add a good squeeze of fresh lemon or lime juice.  Add salt and black
pepper to taste.  If you like spicy a sprinkle of crushed red pepper flakes
is good.


Rice

Use a 16 ounce package of frozen vegetables, one of those nice combinations,
whatever you like best.  Pour into a sauce pan, add 1/2 cup veggie broth, or
1/2 cup water and 1 veggies bullion cube, simmer for 5 minutes.  Add some
fresh or dried herbs, maybe a sprinkle of Mrs.. Dash onion herb seasoning,
or a sprinkle of curry powder if you like that.  Serve over cooked rice.

If you like, you can add some tofu, either cubes of the fresh stuff, or you
can marinate slices in tamari, freshly grated ginger and crushed garlic, and
bake at 350 degreed Fahrenheit for 20 - 30 minutes.
