I'm for easy too and all my meals are for one person. Try this general plan:
Pick one item from each of the following lists, combine if it makes sense at
home in a transportable container, and microwave to heat when ready to eat.
Or take the tortillas, bread, etc. separately if appropriate. Most things
listed can be obtained at any grocery store in a fat-free version.
A (precooked) can of beans (black, pinto, navy, garbonzo, kidney, black-eyed
peas, baked, etc)
A grain (polenta, brown rice, tortillas, whole-wheat bread, cous-cous,
millet, barley, etc)
A vegetable or two (canned if necessary, corn, peas, tomatoes, asparagus,
mushrooms, etc)
Something for spicy excitement (salsa, Oriental sauces in bottles such as
citrus fruit or mango chutney, soy sauce, flavored vinegar, etc)
If your concoction looks too big for your meal, split it in two and enjoy
twice. The number of combinations is nearly infinite and you'll likely find
some favorites to repeat frequently. (I have a special fondness for polenta,
black beans, tomatoes, and salsa.) Enjoy!
