Red Soup

This is a recipe from one of Radha's vegan cooking classes, and it's my
favorite soup now.

Red soup

10 Cups water
2 Cups red lentils
3 red potatoes, chopped
1 red beet, chopped fine 
1 red onion, chopped
1 carrot
2 cloves garlic, minced
1/2 teaspoon crushed red chili peppers
1 Tablespoon dill weed
juice of 1 lemon
1/2 cup red miso
1/2 cup veggie juice (organic)

Bring water and lentils to a boil.  Scrub but don't peel veggies before
chopping; buy organic veggies when possible.  Add potatoes, beet, onion,
carrot, garlic, peppers and dill.  Simmer for 20 minutes or till potatoes
are tender.  Mash miso and juices together and add after removing the soup
from heat and just before serving.
