These should freeze well if you get a nice pot of boiling water going. Put
the washed peas in a metal colandar. Have a big bowl of ice water
available. Merely dunk the colander full of peas in the boiling water for
about 1 minute. Then immediately drain and plunge into the ice water. When
they are cool pat dry and put in zip lock freezer bags.
Also if you mix the cooked peas with regular frozen peas, a few cooked pearl
onions and some sprouts (pea shoot sprouts if you can find them). Make a
dressing of seasoned rice vinegar and soy sauce to taste. Sprinkle with
toasted sesame seeds. Yummy
