I wanted to post this to list in case any others missed it. I haven't
tried it yet, but it sounds yummy.
Can't remember who posted this.....
Want something quick, hot (baked), healthy, and for only one
person (can't stop eating till its gone) ?? Here is my latest
breakfast bake:
Bran Muffins
1/2 cup bran cereal (like AllBran)
1/4 cup flour
1 teaspoon baking powder
salt (I omit)
1 egg white
1/4 cup milk
Combine milk and bran cereal and set aside for 5 minutes. Combine
flour,
baking powder, and salt. Add to bran, then add egg white. Divide into
3 sprayed muffin cups. Bake at 400F for 20 minutes.
These are nice and crunchy right out of the oven, but not sweet.
You can either add fruit before cooking (I always have frozon
blueberries
in the refrigerator), or decide how much fruit/sugar you want by putting
it on after cooking.
