Chickpea curry - reducing its fat content

Quick 'n Dirty Chickpea Curry

To reduce the fat content of this recipe, you may want to replace the 1/3
cup of grated coconut with coconut essence.  I replace coconut milk with
1tsp coconut essence and skim evaporated milk, which covers both flavour and
texture.
