One of my favorite ways to serve asparagus:
Asparagus Vinaigrette
16-18 asparagus spears, ends trimmed
1/4 cup vegetable broth or stock
2 tbsp. raspberry vinegar (preferred) or white wine vinegar
1/2 tsp. grated orange peel
1/4 tsp. ground black pepper
1/4 tsp. salt (optional)
Arrange the asparagus in a rectangular, microwave-safe dish. Pour the broth
over
it, cover, and microwave on high for 3 minutes. Remove and add remaining
ingredients. Cover and microwave for one more minute, or until asparagus is
just
tender (not mushy). Serves 3-4.
