Janice asked about coconut extracts.
I replace coconut milk with lite evaporated milk (in a can), which gives a
curry that milky texture for, say, a green curry and if the coconut flavour
is needed as well, two or three drops of coconut essence can be added.
This recipe is vastly lower fat, and I don't notice much taste difference at
all.
