4 1/2 cups spelt flour
2 tablespoons vital wheat gluten flour
1 teaspoon salt
1 1/4 cups water
1/2 cup frozen apple juice concentrate
2 1/4 teaspoons active baker's yeast
Place the ingredients in your automatic bread maker and bake according to the manufacturer's directions.
Makes one loaf.

NOTES : Spelt, an ancient grain, makes an exceptional bread flour. Spelt bread rises well without the addition of gluten and has a soft and fine-grain texture. Substitute spelt flour for whole wheat flour in any recipe. Replace each cup of whole wheat flour with 1 cup plus 1 tablespoon of spelt flour.
