Whole Wheat Corn Loaf (1 1/2 lb. loaf)

This sweet, dense bread is simple to prepare and makes a hearty meal when served with soups and salads.
3 cups whole wheat flour
3/4 cup yellow corn meal
1/4 cup vital wheat gluten
1 tablespoon turbinado sugar
1 teaspoon salt
1/2 cup unsweetened applesauce
1 tablespoon tofu
1 1/2 cups water
2 teaspoons active dry yeast
Put first five ingredients in a glass bowl and stir until well mixed. (The reason is that vital wheat gluten hardens into lumps if not mixed with the flour.) Place the ingredients in your automatic bread maker and bake according to the manufacturer's directions.
Tip:
Make several batches of the dry ingredients and place in a small plastic bags. Freeze for use later.
