Typically, Asian mock duck is made primarily from wheat gluten, aka
seitan.  It is a commercial product, often sold in cans.  The gluten
product is created in sheets which are then rolled into coils.
Sometimes the surface is stamped to give a goosebump appearance. Cans
of mock duck and other mock meats can be found in most asian
groceries, though they often include oil.

Although you won't get quite the same texture, any recipe for gluten
or seitan, or seitan product should be similar.
